I can't have been paying attention. The (sample) Scottish Military Service Appeals Tribunal records are available on line at Scotlandspeople.

The pull down menu suggests that there just might be a little more than the Lothians retained sample - but that might only be cases which reached the Central Appeals Tribunal.

In 1921 a general order was issued for destruction of Military Service Tribunal records, as being no longer of value other than for the research on the administration of the system (as distinct from researching individual people); exceptions were formally made for Middlesex in England and Lothian in Scotland, to be deposited in the respective Public Record Offices, now National Archives.

Despite that order, some records did survive in some places, and are in other depositories. It is unclear from the Scotlands People description exactly to what records they are referring - doubtless to the Lothian records, but possibly also to some others.

Evidence that the person compiling the description was not wholly familiar with Tribunal nomenclature is shown in the use of the words "Appeals Tribunal". The title in the Act was "Appeal Tribunal" for the county-based appeal tribunals, and "Central Tribunal", for the overarching final tribunal.

There are 7972 cases between 1916 and 1918.

So if this is your area of research then i hope you have a big piggy bank, cause they aint cheap!
